Quick and Easy Crispy Cast Iron Skillet Home Fries

Home fries in a cast iron skillet cook up crispy brown on the outside and tender on the inside every time. This quick and easy side is perfect to serve for breakfast, brunch, lunch, or dinner.

Ingredients

  • 2 pounds Yukon Gold Potatoes dices
  • 2 Tbsp Lard or other high smoking point cooking oil
  • 2 Tbsp Butter
  • Salt and Pepper to taste

Instructions

  • Start by rinsing the potatoes under cold running water to remove any dirt or debris and pat dry with a kitchen towel.
  • You can peel the potatoes, however, I leave the skin on for a more rustic flavor and look.
  • Using a sharp knife, carefully cut the potatoes into uniform pieces, approximately 1/2 inch. The size of the pieces can vary depending on personal preference but aim for consistent thickness to ensure even cooking.
  • Preheat your cast iron skillet over medium-high heat.
  • Once your skillet is hot, add your cooking oil to coat the bottom of the skillet. This helps prevent the home fries from sticking and promotes crispiness.
  • Carefully add your home fries and toss with a metal or wooden spatula until evenly coated with oil.
  • Season the home fries with salt and pepper or your seasoning of choice.
  • Reduce to medium heat and let the potatoes cook undisturbed for approximately 5 minutes at a time, using a spatula to gently flip the home fries to ensure even browning on all sides.
  • Stirring approximately every 5 minutes, continue cooking for 25-30 minutes until your home fries are crispy and cooked through. You want your home fries to be crispy golden brown on the outside and tender on the inside.
  • Serve your crispy home fries hot as a delicious side for breakfast, brunch, lunch or dinner. Enjoy!
